NO REFINED SUGAR. NO WHITE FLOUR. NUT FREE OPTION.
I am not sure if it is the whole six children thing, or maybe the homeschool thing, but for some reason people seem to think that I must be a good multi-tasker or "supermom", among other things.
You will be happy to know that these comments only come from strangers because people who know me know the real truth.
The truth is that you don't want to give me a piece of gum if you want me to tie a child's shoe and if I start emptying the dishwasher and something else catches my attention I am gone faster then my labrador chasing a butterfly during obedience training.
I return to complete my task eventually, that is if I can remember whether the dishes were clean or dirty.
I began these bars one afternoon and received a phone call from my mom before I had even softened the butter.
By the time I had hung up the phone I knew all about the woman in the grocery store line with the toilet seat cover hanging from her pants but had no idea what I had put into my mixing bowl.
I threw a few more things in hopes of having something that would not have to be tossed and stuck them in the oven.
Much to my surprise, these babies were the best bars I had ever made and I didn't have a clue how I made them.
After several attempts I was finally able to duplicate the recipe.
I made them for my husband's track team where they got the name "PR Bars", short for "Personal Record" bars. They give a good amount of energy with the honey and oats that the team needs without the sugar and nastiness of other candy bars.
Feel free to improvise and change the measurements anyway that sounds good to you! It's a very flexible recipe.
PR BARS:
WHOLESOME GRANOLA BARS
•2 3/4 cups rolled oats
•1 1/2 cups spelt flour
•1 tsp baking soda
•2 tsp vanilla
•1/2 cup butter, softened
•1/2 Sunflower seed butter (or nut butter of choice)
•1 cup honey...
* Add- ins
*1 cup Sunflower Seeds
*1/2 cup chocolate chips
*This is the nut-free version. You can substitute the add-ins with up to 2 cups of any combination of your choice: nuts, dried fruit, coconut flakes, etc.
Set oven to 325 degrees.
Lightly butter a 9x13 baking dish.
In a large mixing bowl combine butters and honey. Mix all other ingredients into the bowl adding all "add-ins" last.
Press firmly into greased baking dish.
Bake for approximately 25 minutes
Let cool a bit before cutting.
